Carol Estella Foster, the founder is a former truck driver who used to make the dish for colleagues as she drove on the roads of the USA. She has tasted all the gumbo prepared in restaurants on the road and was not satisfied. The idea came up to her when she found an old family recipe which she started to cook for herself, then the idea of a business venture was born.
